A. GAME AND POULTRY
Our British game is sourced within Shropshire, where possible. If we have supply difficulties we will extend our search, county by county. There are supply difficulties with some really interesting birds, such as Guinea Fowl and Quail, in which case we source from reputable companies in Europe - mostly France and Italy.
AA. FREE RANGE CHICKEN
By popular demand, and following the recent publicity given to the poor welfare standards within this industry, we are pleased to be able to offer Free Range Chickens reared at Crowsmoor Farm, Craven Arms, Shropshire, who are a family farm specialising in free range chicken and chicken products.
B. THE SAFARI SELECTION
Would you like to try something really different? The following is a selection of meats supplied by carefully monitored, EEC approved sources in the UK, Africa and Australia. All of these game meats are harvested professionally having lived healthy lives at liberty on the plains, under the strict CITES regulations. If you're spoilt for choice, try one of our selection boxes!

CHOICE LAMB CUTS
Lamb shanks are such a popular dish, and we are reguarly asked if we can supply them ...so we have come up with two options for you here. You can either use your own recipe, for those who enjoy the kitchen, or for those who never seem to have the time, you can choose the deliciously tender pre-cooked shanks. Also here are our British Lamb Cutlets packs which make wonderful barbeque food ....
D. ROSE VEAL
Did you know that our Rosé Veal products have been served at Buckingham Palace? The Royal Chef was very impressed with our Rosé Veal and we were delighted to have it confirmed that if the opportunity arises, we will be asked to supply the Palace direct......
E. SPECIALITY SAUSAGES AND BURGERS
Take advantage of our special offer at the moment on our speciality sausages - make up your own selection of five packs and we will give you a sixth pack free of charge. F. VENISON
The Venison we sell is sourced from Premier Country Estates in Cheshire, Shropshire, Mid-Wales and Scotland. We hope we have presented the more popular cuts of venison and have researched some very old recipes for this royal game.
G. PUREBRED WILD BOAR
Only three centuries ago Wild Boar could be found roaming freely in the English countryside. Their deliciously rich meat was highly prized and they were hunted to extinction by the aristocracy. Now Wild Boar can be eaten again, having been reintroduced to this country from Eastern Europe and farmed here in the UK.

I. BRITISH KID GOAT
Our newest producers are Tim and Marnie Dobson, from Radmore Green Farm in Cheshire. They are producing some beautiful quality Boer qoat meat for us. Our visit to the family farm was a delight - the goats are kept in perfect conditions in airy, well lit barns and will be free range during the summer months. We are still developing more varied cuts and joints to offer you, in addition to those listed below ... watch this space!!

This wonderful book is crammed full of information about people all over the Country who are producing fabulous quality REAL food. The Book is to accompany Rick's television series which has proved so popular with the general public.

THE MUTTON RENAISSANCE
Until this year, there were no industry-wide standards for meat sold as mutton. New guidelines drawn up by Mutton Renaissance aim to ensure that mutton is consistently of the quality expected by chefs and home-cooks. The standards specify that sheep must be over two years old, and that animals must have a forage-based diet (for example, grass, heather and root crops).
